White Chicken Chili

Who doesn't love chili? Its hearty, meaty, and filled with delicious beans, tomatoes, and spices that have been simmered nice and slow for at least an hour. But, while traditional chili is always tasty, it can be a heavy meal on your stomach and can also be time consuming. An equally delicious but different alternative to traditional chili is white chicken chili. its creamy, filled with tender chicken and spices, and has as many tasty beans and vegetables as you could want. Also, you can simmer it for an hour or so but my quick 20 minute version is delicious as well and perfect for the people who don't have time for recipes that take 30 minutes or more to cook. Try this recipe the next time you feel like eating chili but want to try something different!










Ingredients:

-1 cup chopped boneless skinless chicken breasts lightly seasoned with McCormick Rotisserie Chicken Seasoning

-1/2 cup chopped red onions

-1/2 cup frozen sweet white corn or yellow corn

-1 or 2 cans cannellini beans (drained and rinsed) or navy beans

-1 can fire roasted tomatoes (drained)

-1/2 cup chopped green bell peppers

-7 oz. can of diced green chilies

-4 cups chicken broth

-4 oz. cream cheese

-1 tsp. cumin

-1 tsp. coriander

-2 tbs. minced garlic

-2 tbs. lime juice

-1 tbs. chipotles in adobo sauce

-1/4 tsp. cayenne pepper

-1 tsp. smoked paprika

-salt to taste

-black pepper to taste

-rice for serving


Steps:

  1. Bring broth to a boil. Slowly stir in the cream cheese until it melts. Add all ingredients, cover, and simmer on low heat for 15 minutes. Serve with rice. Enjoy!
