Look no further because my steak and potato soup is packed with low carb vegetables, tender beef, and fills your stomach will going down easy. Who can say no to tender steak and potato soup but packed with a variety of vegetables that have been slowly simmered together?

Ingredients:
-1/2 lb. beef stew meat (diced), 1 lb. ground beef, or 1 lb. ground turkey
-1 can diced tomatoes
-2 russet potatoes (peeled and chopped)
-1/2 cup chopped celery
-1/2 cup chopped carrots
-1/4 cup chopped yellow onions
-6 cups beef broth
-4 tbs. olive oil (if using beef stew meat)
-2 tbs. butter or margarine
-3 tbs. flour or cornstarch
-1/2 tsp. salt
-3 tbs. Worcestershire sauce
-2 bay leaves
-1/2 tsp. dried thyme
-1/8 tsp. dried rosemary
-3 tbs. minced garlic
*Note: if you don't want the soup to be thick, you can omit the flour/or cornstarch and the butter/or margarine
Steps:
Heat oil in a pot. Add beef and season with salt and black pepper. Cook beef until browned and set aside.
Add butter to the pot. After the butter melts, mix in flour then the broth. Stir until flour and butter mixture is fully blended with the broth. Add all seasonings, beef, and vegetables and bring to a boil. Cover and simmer on low heat for 1 hour if using beef stew meat. If you're using ground meat, cook for 30 minutes.
Remove bay leaves and enjoy!
