Addictive Shrimp, Cauliflower, and Potato Curry

I love eating curry and I love making curry at home. I came up with recipe when I couldn't choose between making Indian curry or a Thai curry and I just knew that I wanted to make an Asian curry. I ended up combining a bit of both and made this Indian and Thai inspired curry. If you love shrimp, coconut Thai curry, and mild Indian chicken curry, you'll love this recipe!





Ingredients:

-1/2 lb. medium sized shrimp

-2 -3 chopped russet potatoes

-a small or half of a medium sized head of cauliflower (chopped)

-1/2 cup chopped carrots

-3 tbs. Savory Spice Medium Yellow Curry Powder (see here for more info)

-3 tbs. olive oil

-1 can coconut milk

-2 cups chicken broth

-1 tbs. sugar

-3 tbs. fish sauce

-3 tbs. lime juice

-1 tsp. ground ginger

-1 tsp. coriander

-1 tsp. salt

-1/4 tsp. black pepper

-3 tbs. minced garlic

-1/2 tsp. red crushed pepper

-basmati rice for serving


Steps:

  1. Heat oil in a pot and add the curry powder. Add the broth and coconut milk and bring them to a boil. Add all ingredients, cover, and cook on low heat for 15 minutes. Serve with rice. Enjoy!
