Quick and Easy Chicken, Spinach, and Hokkien Noodles

I've probably said it many, many, many times already on my posts but pasta and noodle dishes have always been my top favorite thing to cook since I was a teen. Whether its noodle soups, stir fries, served with curry, or a comfort pasta dish, I just love noodles! My favorite part is that they're so easy and fast to cook and there's a wide variety of flavors and recipes you can make with them for all of your moods.


Recently, I've been wanting to try making a noodle dish with peanut butter as a main ingredient for the sauce and using Hokkien noodles which are also known as lo mein noodles. I was also inspired by the the deliciously spicy and peanuty flavor of dan dan noodles which consists of ground pork, sui mi ya cai (Chinese dried mustard greens), your choice of leafy greens (bok choy or spinach), and dried white noodles like angel hair, Hokkien noodles, or other kinds of Chinese noodles. While this recipe isn't dan dan noodles, you can think of it as a fast and deliciously spicy and peanuty chicken version that's equally bursting in flavor. Its also delicious with ground pork and bok choy instead of chicken and spinach. Fans of the complex flavor of peanut with other spices in noodle dishes like Pad Thai will also love this recipe as much as I do!


Next time you're craving a quick Chinese noodle dish that you can make at home, why not try this one?





Ingredients:

-2 boneless skinless chicken breasts cut into bite sized pieces or 1 lb. ground chicken

-3 cups fresh spinach

-2 packs of cooked Hokkien noodles

Sauce:

-3 tbs. peanut butter

-1 tbs. chili crisps in oil (I use Lao Gan Ma brand)

-2 tbs. soy sauce

-2 tbs. minced garlic

-1 tbs. honey

- 2 tbs. chili oil


Steps:

  1. Mix all sauce ingredients together in a small bowl or container. If using chicken breasts, mix 3 tbs. of the sauce together with the chicken in a bowl. Cook the chicken in a large pan on med-high heat for about 6 minutes into browned. If using ground chicken, add the chicken to the pan with 3 tbs. of the sauce and cook for about 6-7 minutes stirring occasionally until the chicken is browned.

  2. Add spinach, noodles, 1 tbs. water, and the rest of the sauce to the pan. Cook for about 4 minutes and stir to mix everything together thoroughly. Serve and enjoy!
