Easy One-Pot Chicken, Celery, Carrots, and Rice

Are you looking for a healthy and simple one-pot meal that's perfect for the days when you have time to let dinner slowly simmer for at least an hour? Well you've come to the right place! As a self taught home cook I'm always researching and creating meals that are tasty, filling, easy to make, and good for me and my loved ones. One-pot meals are one category as well as learning how to cook with dried beans that I've been focusing on lately. Sometimes I don't want to make a lot of dishes from cooking lunch or dinner and sometimes I have time for recipes with longer cooking times. If you love tender chicken and vegetables, brown rice, and meals that aren't heavy on the salt, you'll love this recipe.








Ingredients:

-1 1/2 cups chopped boneless skinless chicken breasts

-1/2 cup chopped yellow or red onions

-1/2 cup chopped carrots

-1/2 cup chopped celery

-2 cups long grain brown rice

-4 1/2 cups chicken broth

-2 tsp. McCormick Rotisserie Chicken Seasoning

-1 tbs. margarine or butter

-salt and black pepper to taste


Steps:

  1. Bring the broth to a boil in a pot. Add all ingredients, cover, and cook on low heat for 55 minutes making sure to stir halfway through cooking. Serve and enjoy!
