Joi's Chicken and Gravy with Vegetables

Chicken and gravy with rice is one of those savory and indulgent American dishes that make you feel at home when you smell it cooking and when you eat it. Similarly to my chicken pot pie recipe, this is an easy and tasty way to make chicken and gravy but with vegetables and as a casserole. Being able to throw everything in a baking dish and into a oven makes this method perfect for the average home cook who doesn't have time for a lot of prep. Trust me, there won't be any leftovers!

Ingredients:

-2 cups chopped boneless skinless chicken breasts

-1 cup chopped celery

-1/2 cup chopped red or yellow onions

-1/2 cup chopped carrots

-1 cup chopped baby bella mushrooms

-1 tbs. McCormick Rotisserie Chicken Seasoning

-2 dry chicken gravy packets (I use Food Lion's brand)

-1 can cream of chicken soup

-1 can cream of celery soup

-2 cups water

-1/2 cup sour cream

-black pepper to taste


Steps:

  1. In a bowl, mix gravy packets, water, sour cream, soups, vegetables, chicken, and all seasonings. Preheat oven to 400 degrees.

  2. Add mixture to a baking dish and bake for 30-35 minutes. Serve with rice. Enjoy!
