One of my favorite satisfying and delicious meals to cook at home is stroganoff. There's something about hearty ground beef or turkey paired with sauteed mushrooms and onions and wide egg noodles doused in a savory homemade sauce that makes you feel at home with every bite. The best part is that its pretty simple to make and packs a lot of flavor. As someone who recently has fallen in love with mushrooms, this is one of the best recipes to add lots of mushrooms to. There's also nothing like the smell of mushrooms and onions being sauteed in butter to whet your appetite. The smell of chicken broth also gets me excited to eat. Stroganoff is a heavy dish that probably shouldn't be eaten too often but its an absolute treat when you do indulge in it. Personally, I always make this recipe with ground turkey and lots of mushrooms and some carrots for a veggie boost. Either way, this dish is delicious whether you choose beef or turkey. I enjoy cooking this for my family!
-1 lbs. ground turkey or ground beef
-8 oz. egg noodles
-1/2 cup chopped yellow onions
-1 1/2 cup chopped baby bella mushrooms
-1/2 cup chopped carrots
-3 tbs. minced garlic
-2 tbs. Worcestershire sauce
-1 tsp. salt
-1/4 tsp. black pepper
-2 cups beef broth
-1 1/2 cups sour cream mixed with 2 tbs. cornstarch
-1 tsp. smoked paprika
Cook noodles and drain. Brown meat, onions, and mushrooms in a pan.
Add broth, sour cream and cornstarch mixture, and all seasonings to pan. Simmer for 5 minutes. Mix in egg noodles and serve. Enjoy!
