Cheesy Sausage, Bell Peppers, Onions, and Scrambled Eggs

I don't usually make breakfast during the week, but I love making lots of delicious combinations with scrambled eggs with different vegetables, cheese, and meats. This recipe is one of my many scrambled egg combinations that make me excited to have breakfast or brunch on the weekends! Also, my brother (who is usually the main person who eats my creations) loves breakfast food and has been bugging me about making more breakfast recipes so I've been trying my hand at it. There's nothing like the smell of fresh bell peppers and onions simmered in the juices from a sausage and covered in some delicious melted cheddar cheese. Sausage that has been cooked on the stove or in the oven until it gets nice and smoky is one of my weaknesses and if its yours and you love scrambled eggs, you'll love this recipe! I'll be posting more easy and tasty breakfast recipes in the future so look forward to them!

Ingredients:

-1 cup sliced kielbasa, turkey kielbasa, or andouille sausage

-2 or 3 eggs

-1/2 cup chopped green bell peppers

-1/2 cup chopped red bell peppers

-1/2 cup chopped yellow onions

-1/2 cup chopped baby bella mushrooms (opt)

-2 tbs. unsalted butter or margarine

-1/4 cup grated cheddar cheese

-salt and black pepper to taste


Steps:

  1. Melt butter or margarine in a pan on med-high heat. Add sausage and vegetables. Cook stirring occasionally for 10 minutes until the vegetables have softened and the sausage has started to brown.

  2. Mix up the eggs in a bowl and add to the pan. Gently stir until eggs are fully cooked and mixed with the rest of the ingredients. Top with cheese and serve. Enjoy!
