Easy Scrambled Eggs with Spinach, Bacon, Mushrooms, Onions, and White Cheddar

Who doesn't love a good quick, easy, and nutritious breakfast or brunch? Most of the time I skip breakfast and go straight to brunch or lunch and I'm usually not in the mood for the usual breakfast food when I do. Sometimes my heart craves a good egg scramble as my first meal of the day when I'm not having a protein shake after I workout. This recipe is one of my favorite go to egg scramble combinations when I'm craving vegetables with scrambled eggs. If you're also a fan of easy breakfast or lunch ideas, try this recipe out and have fun making our own twists on it!





Ingredients:

-2-3 eggs

-1 cup fresh spinach

-1/4 cup chopped red or yellow onions

-1 cup chopped baby bella mushrooms

- 2 tbs. real bacon bits

-2 tbs. margarine or butter

-grated white cheddar cheese to taste

-black pepper to taste

-salt to taste


Steps:

  1. Melt butter or margarine in a pan on medium high heat. Add mushrooms and onions to cook for 5 minutes, stirring occasionally. Add spinach, bacon, and eggs to cook until the eggs solidify and the spinach has wilted and turned dark green. Serve with the grated cheese and enjoy!
