Vietnamese Sweet Lemon Curry

I've been interested in curries lately and have learned how to make a couple tasty ones from different cultures including Jamaican, Japanese, Thai, and Indian. Until one of my friends sent me some Savory Spice brand "Vietnamese Sweet Lemon Curry Powder", I had no idea that curry was a thing in Vietnamese cuisine. As someone who loves food and trying food from different cultures, I was super excited to learn how to make it and this recipe is my take on this type of curry. This curry is perfect for people who want to try a curry that isn't spicy but slightly sweet with black pepper, paprika, and a hint of lemon. Its absolutely delicious!





Ingredients:

-1 cup chopped boneless skinless chicken breasts

-1/2 cup chopped carrots

-1/2 cup chopped yellow onions

-2 russet potatoes (peeled and chopped) or 4 oz. rice noodles

-1 cup chopped green cabbage

-1 cup chopped cauliflower (opt)

-3 tbs. Savory Spice Vietnamese Sweet Lemon Curry Powder (see for more info)

-3 tbs. olive oil

-3 tbs. coconut oil

-1 can coconut milk

-2 cups chicken broth

-1/2 tsp. salt

-1/4 tsp. black pepper

-3 tbs. minced garlic

-3 tbs. fish sauce

-2 tbs. lemon juice

-1 tbs. sugar

-1/2 tsp. allspice

-1 bay leaf

-basmati rice for serving (opt)

*Note: If you want a thicker curry, use 1 1/2 cups chicken broth instead of 2


Steps:

  1. If using noodles, cook noodles and drain. Heat oil in a pot and mix in the curry powder. Add the milk and broth then bring the pot to a boil.

  2. Add the rest of the ingredients, cover, and let simmer on low heat for 15 minutes. Remove the bay leaf and serve with basmati rice. If using noodles, serve with the noodles. Enjoy!
