There's nothing like the heavenly combination of sausage, potatoes, and cabbage no matter if its in a soup, baked, or stir fried. As someone who loves cabbage, I'm always on the lookout for recipes, ideas, and combinations using cabbage and this recipe along with making chicken and cabbage in a stir fry satisfy my "stir fry with cabbage" moods. This recipe is also is very quick to make and doesn't require a lot of seasoning due to the delicious flavor if the sausage and the vinegar. -1 1/2 cups chopped kielbasa or andouille sausage
-2 cups chopped green cabbage
-2 chopped russet potatoes or red potatoes
-1/2 cup chopped red onions
-1/2 cup chopped carrots
-3 tbs. olive oil
-3 tbs. butter or margarine
-4 cups water for the potatoes
-2 tbs. minced garlic
-1 tsp. smoked paprika
-1 tbs. red wine vinegar or apple cider vinegar
-black pepper and garlic salt to taste
In a pot, bring the water to a boil. Add the potatoes and cook for 10 minutes then drain. On high heat, add 1 tbs. of the oil to a large pan or wok. Add the chopped sausage and cook until browned about 3 minutes. Add the rest of the ingredients and seasonings and cook for about 10 minutes until the cabbage and carrots are tender and the potatoes have browned a bit. Serve and enjoy!
