Lemon Thyme Chicken, Beans, and Collard Greens Soup

As a home cook who loves creating soups, I am proud to share this healthy, delicious, and easy soup recipe. This recipe can be tweaked to use different kinds of greens, beans, and meat in it as well. Lemon and dried thyme are a match made in heaven and combined with the earthy flavor of collard greens, it creates magic.


-1 cup chopped boneless skinless chicken breasts

-2 cans cannellini beans or navy beans

-2 cups fresh pre cut collard greens or baby spinach

-1/2 cup chopped celery

-1/2 cup chopped carrots

-4 cups chicken broth

-1 cup water

-1/2 tsp. dried thyme

-2 tbs. minced garlic

-3 tbs. lemon juice

-2 bay leaves

-1 tsp. salt

-1/4 tsp. black pepper

-1 tbs. olive oil

-1/2 cup chopped yellow onions

-parmesan for serving

*Note: If you are using spinach, wait until the last 3 minutes of cooking to add to the soup and then turn off the heat


  1. Bring broth to a boil and add all ingredients. Cook on low heat for 15 minutes. Remove bay leaves and serve. Enjoy!
