I love making soup because soup is one of the cooking genres where the sky is the limit for creativity. There are just so many possibilities for soup ingredients and most aren't difficult to make. The basic components you have to decide on when making a soup are:
-type of broth
-cream based soup or broth based soup
-herbs
-spices
-meats
-vegetables
-grains
Once you have those decided you can make any kind of soup you want from hearty and heavy to light and refreshing. Now, I love making different variations of chicken tortellini soup and this is my first and my favorite version that I've come up with. Its perfectly filling and healthy and if there are leftovers, there won't be for very long!
Ingredients:
-1 cup chopped boneless skinless chicken breasts
-1 cup baby spinach
-1/2 cup chopped carrots
-1 cup chopped baby bella mushrooms (opt)
-16 oz. bag frozen cheese tortellini
-6 cups chicken broth
-1 tsp. McCormick Rotisserie Chicken Seasoning
-black pepper to taste
-1 tsp. salt
-2 tbs. minced garlic
-chopped green onions for serving
-parmesan for serving
Steps:
Bring broth to a boil and add all ingredients except the spinach, tortellini, and green onions. Boil on med-high heat for 10 minutes. Add tortellini and cook for 5 minutes. Add spinach and cook on low heat for 3 minutes. Serve with green onions and parmesan. Enjoy!
