Easy Steamed Lemon Garlic Asparagus

I used to hate asparagus until recently and so far cooking asparagus with garlic, lemon juice, and margarine have become my favorite way to cook asparagus. This recipe is a healthier version of my pan fried asparagus recipe but is equally delicious and easy to make. Whether you're new to cooking asparagus or eat it often, you'll like this recipe especially if you like lemon and garlic.








Ingredients:

-1 or 2 bundles of fresh asparagus

-2 tbs. lemon juice

-1 tbs. minced garlic for 1 bundle and 2 tbs. for two bundles

-2 tbs. margarine or butter

-black pepper to taste

-salt to taste

-a metal steamer basket or colander

-a large pot

-3 cups water

-a mixing bowl


Steps:

  1. Chop asparagus into small pieces and make sure to remove the hard stems on the end. Place the asparagus into a metal colander/or steamer basket. Add the water to the large pot and bring to a boil.

  2. Place the steamer basket on top of the pot, cover, and cook on low heat for 15-20 minutes. Use a fork to test if the asparagus is tender. Remove the asparagus from the steamer basket and place into a mixing bowl. Mix in all seasonings and serve. Enjoy!
