Easy and Simple Shrimp and Veggie Fajitas

Fajitas are probably one of my favorite comfort foods to eat when I go to a Mexican restaurant. There's nothing like the smoky flavor of grilled shrimp and chicken mixed with freshly sauteed vegetables with a side of beans and rice. If you're a beginner cook you might think making a perfectly quick and tasty fajita is hard but have no fear. Shrimp and chicken are some of the easiest and quickest meats to cook for beginners as one myself and you can use this recipe as a starting point for learning how to cook shrimp for other recipes as well. Like most of my recipes, these shrimp fajitas are packed with lots of vegetables and flavor that is perfect for people who like mild heat in their food and is adjustable for those who want more kick. The chipotles in adobo sauce really bring out a pleasantly smoky flavor and enhances the vegetables so even if you don't have the tools at home to grill the shrimp and veggies, you still get the flavor!

Ingredients:

-3 cups medium sized raw or cooked shrimp

-1 cup chopped green bell peppers

-1 cup chopped red bell peppers (opt)

-1/2 cup chopped yellow or red onions

-1/2 cup frozen sweet white corn

-1 15 oz. can black beans (rinsed and drained)

-tortillas for serving

-sour cream, hot sauce, and/or cheese for serving

For Shrimp:

-1/2 tsp. chili powder or McCormick Chipotle Mexican-Style Chili Powder

-1 tsp. garlic powder

-1 tsp. onion powder

-1/2 tsp. cumin

-1/2 tsp. coriander

-1/2 tsp. smoked paprika

-1/2 tsp. salt

-1/4 tsp. dried oregano

-1 tbs. olive oil

For the Vegetables:

-2 tbs. diced chipotles in adobo sauce

-1 tbs. minced garlic

-1 tbs. lime juice

-1/2 tsp. cumin

-1/2 tsp. chili powder

-1 tbs. olive oil

-garlic salt to taste


Steps:

  1. Thoroughly mix the shrimp and all seasonings together in a bowl and set aside to marinate for 5 minutes. Heat about 3 tbs. of vegetable oil in a pan and add the shrimp. Cook on med-low heat for about 6 minutes, making sure to cook the shrimp for 3 minutes on each side until the shrimp turn pink if using raw shrimp. If using cooked shrimp, cook for 4 minutes, making sure to cook the shrimp for 2 minutes on each side.

  2. In a separate pan heat olive oil on medium heat and add the vegetables and all seasonings. Cook stirring occasionally for 8 minutes until the vegetables are tender. Serve the vegetables and shrimp on tortillas and enjoy!
