Joi's Delicious Taco Pasta

Do you love tacos? Do you love pasta? You probably have never heard of taco pasta before and neither had I until I found it on google. To my surprise, most of the recipes were a bit bland and reminded me of the lack of ingredients in Hamburger Helper. Being a creative home cook, that inspired me to take a crack at this Mexican fusion dish and I'm confident that I came up with one of the best versions of this dish, if not the best out there right now. This dish is sure to be a hit with big families, kids, and anyone who loves tacos who may also have an habit of eating their chili with macaroni noodles.





Ingredients:

-1 lb. ground turkey

-1 cup macaroni noodles

-1/2 cup chopped yellow onions

-1/2 cup chopped green bell peppers

-1/2 cup frozen sweet white corn

-1 can black beans (drained and rinsed)

-1 can fire roasted tomatoes or regular diced tomatoes

-1 can tomato sauce

-4 oz. cream cheese

-1 taco seasoning packet

-3/4 cup water

-2 tbs. minced garlic

-1 tsp. dried oregano

-1 tsp. smoked paprika

-1/4 tsp. cayenne pepper

-1 tsp. cumin

-2 tbs. chipotle peppers in adobo sauce

-1 tsp. salt

-1/2 cup grated sharp cheddar cheese

-1/2 cup grated monterey jack cheese


Steps:

  1. Cook noodles, drain, and set aside. In a pan, cook ground turkey, onions, bell pepper, and corn on medium heat until the meat is browned and the vegetables have softened. Drain the grease. Mix in the taco seasoning and water. Simmer on med-low heat for 5 minutes.

  2. Gently add the tomato sauce, beans, tomatoes, cream cheese, and all seasonings. Mix until the cream cheese is completely melted and mixed in. Simmer for 5 minutes then mix in the noodles and grated cheese until the cheese is completely melted. Serve and enjoy!
