Chicken, Red Beans, and Cabbage Curry

Its starting to get cold outside and what's to eat during the cold months than some hot curry? Curry has been one of my favorite dishes to make since I gave it a try earlier this year. I just love how fast it can be made at home as well as how most of the spices needed are in most people's pantries and its not hard to get ahold of a good curry paste or powder. Curry also gives me more reason to keep cooking with the "Savory Spice Shop" brand's addictively delicious curry powder blends ever since a friend introduced me to their products(not an ad I promise). If you've had curry before you know that there's almost nothing as tasty as curried chicken, potatoes, beans/or lentils, greens, cabbage, and cauliflower. On a weekend where I was craving curry but couldn't decide between chicken curry or bean curry, I discovered that kidney bean curry was an Indian dish after googling for some ideas. I personally usually only use kidney beans in chili or minestrone soup but after combining the kidney beans with chicken, onions, and cabbage in curry, I was sold! If you also love Indian curry, curried chicken, and curried beans, you'll love this quick and mild curry!





Ingredients:

-2 chopped boneless skinless chicken breasts

-2 cups chopped green cabbage

-1 can kidney beans (drained and rinsed) or 1 can small red beans (drained and rinsed) or 1/2 cup cooked red beans or kidney beans

-1/2 cup chopped red or yellow onions

-1 can diced tomatoes

-1 can coconut milk

-2 cups chicken broth

-2 tbs. vegetable oil

-2 tbs. Savory Spice Vindaloo (see here for more info) or any Indian mild curry powder

-2 tsp. garam masala (can also be found at the Savory Spice shop or on Amazon)

-3 tbs. minced garlic

-1 tbs. sugar

-1 tsp. salt

-1 tsp. ground ginger

-1 tsp. coriander

-1 tsp. paprika

-black pepper to taste

-basmati rice for serving


Steps:

  1. Heat the vegetable oil on medium heat in a large pot. Gently mix in the curry powder. Add the broth and coconut milk then bring the pot to a boil on high heat.

  2. Add all ingredients and stir. Cover and cook on low heat for 20 minutes. Serve with rice. Enjoy!
