I came up with this recipe during a time where I really wanted to make a soup with lentils and tomatoes and was trying to figure out what I wanted to do with the leftover vegetables in the fridge, This recipe ended up being a combination of some of my favorites; kielbasa, cauliflower, and tomatoes with some inspired Mediterranean flavor. This soup also tastes great without the sausage when you're in the mood for a hearty vegetarian lentil and vegetable soup. Don't hesitate to experiment with other vegetables like cabbage, have fun, and enjoy this soup that can be made in under 30 minutes!
Ingredients:
-1/2 cup green lentils
-half of a head of a medium sized cauliflower (chopped)
-1/2 cup chopped yellow or red onions
-1/2 cup chopped carrots
-2 chopped russet potatoes
-1 can diced tomatoes
-1 cup kielbasa or andouille sausage
-5 cups chicken broth
-2 tbs. minced garlic
-1 tsp. ground coriander
-1 tsp. ground cumin
-1 tsp. oregano
-1/2 tsp. crushed red pepper
-1 tbs. lemon juice
-black pepper and salt to taste
Steps:
Heat 1 tbs. olive oil in a pot on medium and add the chopped sausage. Cook the sausage until it becomes slightly browned on both sides. Add the broth and all ingredients. Bring the pot to a boil, cover, and cook on low for 30 minutes. Serve and enjoy!
