Lemon Garlic Chicken, Zucchini and Squash Stir Fry

Sometimes simple is best when it comes to cooking healthy for yourself and your family. As someone who is trying to eat healthier and mainly cooks at home as opposed to eating out, I know how important it is to have control over what you eat when you're trying to improve your lifestyle. This recipe is full of protein and vegetables and it can be easily modified to include other proteins and vegetables as much as you like for multiple variations. The seasonings in this recipe can also go well with:



-green beans

-bell peppers



-1 cup chopped boneless skinless chicken breasts

-1 chopped zucchini

-1 chopped yellow squash

-1/2 cup chopped red or yellow onions

-4 tbs. butter or margarine

-2 tbs. minced garlic

-1 tsp. Lawry's Garlic Salt with Parsley

-black pepper to taste

-lemon pepper to taste

-2 tbs. olive oil

-1 tbs. lemon juice

-brown rice for serving


  1. Heat olive oil and butter/or margarine in a pan. Add chicken, onions, vegetables, and seasonings to the pan. Cook for about 8 minutes on med-high heat, until chicken and vegetables are cooked through. Serve with rice. Enjoy!
