Creamy Garlic Herb Parmesan Chicken, Zucchini, and Rice

Over the past two years chicken and zucchini have become one of my favorite food combinations. I didn't used to eat zucchini often until I started teaching myself how to cook and have been cooking more often in recent years. Now, zucchini is one of my favorite vegetables that cooks quickly and I love putting it in my Mexican and Chinese dishes as well as an easy side when its sauteed. I came up with this recipe on a day when I was craving a semi cheesy creamy chicken and zucchini dish that was different from what I usually do. Boy, did it turn out delicious! The tender chicken and sauteed zucchini and mushrooms paired with creamy parmesan sauce is a match made in heaven that you won't be able to stop eating. Ingredients:

-1 1/2 cups chopped boneless skinless chicken breasts

-1 or 2 zucchini chopped into equal bite sized pieces

-1/4 cup chopped yellow or white onions

-1 cup chopped baby bella mushrooms or white mushrooms

-1 cup long grain white rice or long grain brown rice that has been cooked ahead of time ( especially with brown rice since it usually takes 40-45 minutes for brown rice to cook)

-2 tbs. margarine

Sauce:

-3 tbs. melted margarine or butter

-1/4 tsp. Italian seasoning

-1/2 cup grated parmesan

-1/4 tsp. garlic salt (I personally love Lawry's Garlic Salt with Parsley)

-1/4 cup milk

-1/8 tsp. black pepper or to taste


Steps:

  1. Cook rice according to package directions. If using long grain brown rice, cook at least 45 minutes before you start on the rest of the dish. In a large pan, melt 2 tbs. butter or margarine and cook the zucchini, onions, and mushrooms on med-high heat stirring occasionally for 8 minutes.

  2. Add the chicken and adjust the heat to medium low and cook for 6 minutes, until the chicken has browned. In a small mixing bowl, combine 3 tbs. melted butter or margarine, with all the sauce ingredients and stir well until it thickens.

  3. Add the rice to the pan and stir in the sauce until everything is completely mixed. Serve and enjoy!
