Tasty Cajun Shrimp, Veggies, and Rice

One day I was torn between making a Mexican rice bowl and a Cajun seasoned dish with shrimp and vegetables. A healthy and tasty Cajun rice bowl with shrimp and vegetables was then born. This recipe has a perfect blend of mild heat and spice and is packed with vegetables. Use brown rice for an extra healthy boost.





Ingredients:

-1 lb. medium sized shrimp fresh or pre-cooked

-1 can no salt added diced tomatoes (drained)

-1/2 cup chopped red bell pepper

-1/2 cup chopped green bell pepper

-1/2 cup chopped red onions

-1 cup frozen sweet white corn

-1/2 cup chopped celery

Seasonings:

-3 tbs. olive oil

-5 tbs. butter or margarine

-1 tsp. Spice Jungle Seafood Seasoning (see here for more info)

-Lawry's Garlic Salt with Parsley to taste

-2 tbs. minced garlic

-1 tsp. smoked paprika

-1 tsp. Old Bay seasoning

-1/4 tsp. cayenne pepper or 1/2 tsp. if you want it hotter

-1 tsp. Worcestershire sauce

-3 tsp. hot sauce (opt)

-1/4 cup chopped green onions for garnish

-1 cup cooked rice for serving (I use brown rice or Sarita Long Grain Rice)

Steps:

  1. Using a pan or a wok, heat olive oil and margarine until the margarine is melted. Add the celery, red onions, and bell peppers. Cook on med-high heat for 10 minutes, stirring occasionally until the celery and bell peppers have softened.

  2. Cook rice and set aside. Add the shrimp, tomatoes, corn, and all seasonings to the pan/or wok. If using cooked shrimp, cook for 5 minutes until the shrimp is warmed then serve with rice and green onions. If using fresh shrimp, cook for about 6 minutes, until the shrimp turns pink then serve with rice and green onions. Enjoy!
