As a home cook who is always on the lookout for healthy and filling dinners, I've been experimenting with different kinds of salad combinations for dinner. This recipe is my take on chicken Caesar salad which usually is devoid of vegetables and I turn it into a more substantial meal. Try this recipe the next time you don't want something heavy for lunch or dinner.
Ingredients:
-1/2 cup chopped boneless skinless chicken breasts lightly seasoned with McCormick Rotisserie Chicken Seasoning and black pepper
For Blanching the Chicken:
-1 cup water
-1 tsp. salt
-1 bag of romaine or iceberg lettuce salad mix
- 2 boiled eggs (chopped)
-1/4 cup kalamata olives
-1/2 cup Newman's Own Creamy Caesar Dressing
-1/4 cup grape tomatoes
-1/4 cup julienned carrots
-feta cheese to taste or grated parmesan
-bacon bits to taste
Steps:
Boil, cool, peel, and chop eggs. In a pot, bring 1 cup of water to a boil. Add 1 tsp. salt and chicken to the pot. Cover and cook on low heat for 8 minutes. Drain the water.
In a large mixing bowl, add all ingredients and mix well with the dressing. Enjoy!
