Cheesy Turkey, Onions, and Bell Peppers with Scrambled Eggs

I'm personally not a big breakfast person as I am almost never hungry for breakfast and usually don't get hungry until around noon most days, BUT I do love to cook and come up with tasty breakfast recipes on the weekends on occasion. One of my favorite things to make are what I call my "egg scrambles" where I mix and match a variety of protein, vegetables, and cheese with eggs. They're so simple to make and I love trying out different variations and testing them out on myself and my brother (haha). No matter if you prefer a meat filled, veggie filled, meatless, or a combination of meat and veggies, there's an easy egg scramble recipe for you! Come try one of my egg scrambles that can be made in 15 minutes or less, you won't be disappointed and feel free to put your own spin on my recipes.





Ingredients:

-1/2 cup chopped deli turkey (flavor of your choice)

-1/4 cup chopped yellow onions

-1/2 cup chopped green bell peppers

-1/2 cup chopped red bell peppers (opt)

-2-3 eggs

-2 tbs. unsalted butter or margarine

-black pepper and salt to taste

-1/4 cup grated cheddar cheese or 1 slice American cheese broken up into pieces and evenly distributed over the eggs (helps the cheese melt completely over everything)


Steps:

  1. Whisk the eggs together in a small bowl and set aside. Melt the butter or margarine in a medium sized pan on medium high heat. Add turkey, onions, and bell peppers. Cook, stirring occasionally for 8 minutes. Pour in the eggs, add salt and pepper, and stir gently until the eggs are fully cooked. Turn off the heat, add the cheese, and cover for 3 minutes until the cheese is melted. Serve and enjoy!
